Cheese and Mint Pastries

• • Mix together the yogurt and self-raising flour to form a stiff soft dough. Add a little water of necessary. Knead the dough until elastic. Form into balls the size of walnuts. Cover and let rest for 15 minutes.
  • Mix together the feta, shredded mint and egg. Season with pepper.
  • Roll the dough balls into thin discs, about 12 cm in diameter. Spread 2 tablespoons of the feta in the centre of each circle. Fold the left and right sides to overlap in the middle, brush with a little water and fold in the other ends to form pillow shaped pastries.
  • Heat oil in a large non-stick fry pan and cook the pastries until golden and puffed.
