This delicious pesto can be eaten with bread as an appetizer/snack or stirred through cooked pasta for a main meal.
Instructions
Place almonds, garlic, paprika and parsley in a food processor and mix to a coarse paste. Crumble in the white cheese and ½ the quantity of oil. Process for 10 seconds.
Scrape down the sides of the food processor bowl; add the remaining oil and lemon juice and process for a further 5 seconds.
Tip into a bowl and season with pepper, to taste.
