Zucchini and Potato Pizza

Unlike a traditional pizza, laden with cheese, this pizza is light and tasty.
Instructions
Preheat oven to 220 C. Stretch the dough out until thin and place on a large baking tray lined with baking paper. Mix the crushed garlic and thyme with olive oil. Brush the base with the flavoured oil and then place the potato slices in a single layer over the base. Season with pepper, brush with more garlic oil and scatter over half the quantity of feta.
Add the sliced zucchini to the flavoured oil and toss to coat. Layer the zucchini slices over the potato and feta. Scatter over the remaining feta and drizzle over any remaining oil. Season with a little salt and a generous amount of black pepper.
Cook for 25-30 minutes until the base is crispy and the potato is tender.
