Mix the cream cheese in a bowl with the halloumi cheese.
Add mint, parsley, black pepper and fennel seeds. Mix to combine.
Beat the egg in a small bowl. Set aside.
Cut the pastry sheets to square pieces.
Put 1-2 tablespoons of the cheese mixture in the top corner of the dough sheet. Roll it in layers to a triangular shape. Brush the last layer with the beaten egg and close it.
Heat the oil in a medium frying pan.
Once the oil is hot enough, place the sambousek pieces and make sure they are covered entirely with the oil. Fry them until they are crispy and golden from all sides. Serve hot.
