Samoon bread with cream cheese, Harissa spicy chicken, tomatoes and herbs

  • 3 Chicken Breasts, Medium
  • 4 Pieces Samoon bread
  • 1 Can Harissa Paste, Pepper, Small
  • 250 Grams (gm) Cherry Tomatoes, halved
  • 1 Red Onion, Small, Thinly sliced
  • Salt, To Taste
  • Parsley, Fresh, Few Sprigs
  • PUCK White Cream Cheese Spread
  • Black Pepper, Freshly ground, To taste

Prepare the chicken in advance. Season with salt and pepper, marinate in Harissa paste, minimum 3 hours or overnight.

Preheat the skillet with olive oil and sear the chicken 2 minutes on high heat each side, then reduce the heat to low and cook, changing the sides from time to time, until ready about 20 minutes.

When chicken is cooked, transfer it to the cutting board, let it rest for 5-7 minutes and cut crosswise.

Construct the sandwich. Tear or cut half of the rim of the bread and gently open it to form a pocket. Spread the cream cheese inside of the bread. Add chicken pieces, tomatoes, olives and onions. Season to taste and garnish with fresh parsley leaves.
