Prawn and Feta Saganaki
Prawn and Feta Saganaki

Fresh prawns cooked in a tangy tomato, basil and garlic sauce and scattered with feta. Serve with a simple salad and plenty of crusty bread to mop up the delicious juices.
Instructions
Heat olive oil in a large pan over medium heat. Add leek and cook for 5 minutes. Add the tinned tomatoes and bring to the boil. Add the prawns and cook for 3-4 minutes, until the prawns are cooked through.
Stir though the crumbled feta and herbs. Season with salt and pepper to taste.
Serve with crusty bread to soak up the juice.
