Mediterranean Pasta Salad with Feta Cheese

• • In a bowl, add all the dressing ingredients but the oil. While whisking, add the oil slowly to emulsify. Season with salt and pepper.
  • Boil some water in a pot, bring to the boil and add some salt.
  • Add the pasta and cook for 10-12 minutes or until al dante.
  • Drain the pasta and run under cold water then add 1 Tbsp of dressing to prevent it from sticking. Set aside to cool completely.
  • In a large bowl, add all the chopped ingredients, add the cooled pasta and the dressing. Mix thoroughly.
  • Top with the Puck Cubed Feta Cheese and serve.
