Instructions
Preheat oven to 200C. Lay potato slices in a single layer, in a large oven- proof dish. Drizzle with 1 tablespoon of the olive oil and season with salt and pepper.
Combine white cheese, lemon rind and oregano in a bowl. Take each chicken leg and carefully lift the skin away from the meat. Using a disposable piping bag or teaspoon push the white cheese mixture evenly under the skin of each chicken leg. Rub the chicken to spread the mixture evenly under the skin. Arrange the chicken legs on top of the potato, drizzle over the remaining olive oil and lemon juice season with pepper.
Roast for 30 minutes, and then scatter over tomatoes and olives and cook for another 10-15 minutes, until the chicken is cooked through.
