Sweetcorn Fritters with Cheese and Avocado

Sweetcorn fritters make a great for a casual meal or brunch dish.

  • 1.5 Cups Flour
  • 1.5 Teaspoons Baking Powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Coriander
  • 2 Tablespoons Sweet chilli sauce
  • 2 Eggs, Beaten
  • 1/2 Cup Milk
  • 200 Grams (gm) Canned sweet corn kernels, Drained
  • 1 Spring Onions, sliced
  • Salt, to season
  • Lurpak Butter, to cook
  • 200 Grams (gm) PUCK White Cream Cheese Spread
  • 2 Avocado, Peeled and sliced
  • 250 Grams (gm) Cherry Tomatoes, on the vine, grilled
  • Parsley, sprigs, to garnish
  • Pepper, to season

Sift together the flour, baking powder and spices into a large bowl. In a separate bowl, mix together the chilli sauce, eggs, milk, corn and spring onion. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Season with salt and pepper.

Heat a large frying pan or grill plate. Grease with cooking liquid or butter. Cook batches of fritters for 3-4 minutes per side until cooked through.

To serve, top fritters with a generous amount of cream cheese spread, top with a few slices of avocado, and a small bunch of grilled tomatoes. Garnish with parsley.
