Sticky Date Dessert Muffins with Caramel Sauce

The low sweetness level of these muffins means that you can smother them in delicious caramel sauce!
Instructions
Pre heat oven to 190 °C and grease a standard 12- hole muffin tin. Whisk together the cream, milk and melted butter. Set aside.
Place the dates, golden syrup and boiling water in a heatproof bowl for 5 minutes. Stir in the baking soda. In a separate bowl, sift together the flour, baking powder and spices. Stir in the walnuts. Make a well in the centre of the dry ingredients and pour in the cream and date mixtures. Stir gently until just combined and then spoon into the prepared muffin tins. Bake for 25-30 minutes, or until cooked through and golden.
While the muffins are cooking, prepare the caramel sauce. Combine the cream, brown sugar and butter in a small saucepan and heat gently, stirring, until the sugar and butter are melted and the sauce thickens. Pour the hot caramel sauce over the warm date muffins to serve.
