These delicious muffins make a great lunchbox addition.
Preheat oven to 200 C. Lightly grease a 12 whole medium muffin tin.
Sift flour and baking powder into a large bowl, stir in the parmesan. Whisk together the egg, milk and melted butter. Add the tomato and capsicum to the liquid ingredients.
Make a well in the middle of the dry ingredients. Pour in the liquid ingredients and crumble in the feta. Mix gently until just combined.
Spoon the mixture into the prepared tin. Bake for 20-25 minutes or until a skewer inserted into the centre of the muffins comes out clean. Stand for 5 minutes and then turn out on a wire rack to cool.
