Eggplant Rolls

Chef Lara from Top Chef prepared these eggplant rolls using Puck Cooking Cream

  • 1 Eggplant
  • Olive Oil
  • 500 Grams (gm) Minced Meat
  • 1 Onion, chopped
  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 2 Cloves Garlic, minced
  • 4 Tablespoons Tomato Paste
  • 2 Teaspoons Mixed spices
  • 1 Teaspoon Turmeric
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Paprika
  • 1/2 Cup Water
  • 1 Cup PUCK Cooking Cream
  • 1 Cup PUCK Shredded Mozzarella Cheese

Instructions

Slice the eggplant into thin slices and sprinkle salt and pepper on them. Lightly coat them with olive oil and fry them until soft. Remove them from the pan and set aside.

In a pan, cook the minced meat with the chopped onion. Add the bay leaf, cinnamon stick, and minced garlic and let it simmer.

Add the tomato paste, spices, turmeric, salt, pepper, paprika and ½ cup of water to the meat mixture and cook until it is dried out. Once dry, remove the bay leaf and cinnamon stick.

Add a portion meat mixture to an eggplant slice and roll it up. Do the same for all the eggplant slices and add them to a cooking tray.

Pour the cooking cream over the eggplants and cover with mozzarella cheese.

Bake in the oven for 15-20 minutes.
