Arabic Breakfast Platter with Less Salt Cream Cheese

  • 1 Tablespoon Olive Oil
  • 3 Cloves Garlic
  • 1 Onion, small, finely chopped
  • 1 Tomato, diced
  • 400 Grams (gm) Fava beans, plain,canned
  • 1/2 Teaspoon Cumin
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Parsley, Finely chopped
  • 2 Spring Onions, Finely sliced
  • 1 Cup PUCK Cream Cheese Spread-Less Salt
  • Salt
  • 4-8 Wholemeal pita, small
  • 1/2 Cup Olives
  • 4 Cucumbers, Cut into strips
  • 4 Spring Onions
  • 1 Lemon, Quartered
  • 1/2 Teaspoon Chili powder
  • Pepper

Instructions

Heat oil in a medium frying pan, add onion and garlic and cook until softened. Add tomato, fava beans and spices and cook until heated through. Stir in the lemon juice, parsley and spring onion. Season with salt and pepper

Serve beans topped with cream cheese spread accompanied with bread, vegetables and olives.
