Gouda and Balsamic Mushroom Toasts

The creamy Gouda combines so well with these thyme scented mushrooms.

12 baguettes Slices, diagonal sliced

3 tbsp balsamic vinegar

1 pinch black pepper Freshly ground, to taste

Instructions
Melt the LURPAK butter in a non-stick frying pan over medium-high heat. Add the mushrooms along with the shallots and thyme and cook, stirring occasionally, until soft and golden. Season with salt and pepper, add the balsamic vinegar and simmer to evaporate most of the liquid. Keep warm.
Place the bread slices on an oven tray and toast both sides under a preheated grill.
Divide the PUCK Natural Gouda Cheese Slices in half and place half a slice on each of the toasts. Place under the grill until the cheese begins to bubble, remove, top with mushrooms and the remaining cheese, then grill for 1-2 minutes or until the cheese is golden. Allow to cool slightly before serving.
