These delicious feta and chickpea patties are the star attraction of these burgers.
Instructions
Peel and cube sweet potatoes, and stem until soft, then mash. Heat 1 tablespoons of olive oil in non-stick frying pan over medium heat. Add the onion and garlic and cook for 5-6 minutes, until soft. Set aside to cool.
In a large bowl, mix together the cold mashed sweet potato, cooked onion, spices, mashed chickpeas and coriander. Stir in crumbled feta and season with salt and pepper. Add just enough beaten egg to bind the mixture, making sure it is not sloppy. Chill mixture until firm.
Heat 1-2 tablespoons of oil in a large non-stick frying pan. Divide the mixture into 4 patties and cook for 3 minutes each side, or until cooked through.
Fill the toasted buns with the patties and other ingredients.
