Shrimp Pasta Salad with Low Fat White Cheese

Ingredients

  • 3 Cups cooked small shell pasta
  • 1/3 Cup black olives Niçoise-style
  • 2 Cups steamed green beans
  • 250 Grams (gm) PUCK White Cheese Low Fat, diced small
  • 1 Cup Cherry Tomatoes, split lengthwise
  • 1 1/2 Cups small shrimps
  • 1/2 Cup finely chopped green onions
  • 1/2 Cup chopped parsley
  • 1/4 Cup Basil Leaves
  • 1 Cup Basil Pesto
  • 1/3 Cup Olive Oil
  • 1 Large lemon, juiced
  • 2 Tablespoons apple vinegar
  • 1/2 Teaspoon Black Pepper
  • 1 Pinch Salt

In a large salad bowl, place all the ingredients except the herbs and green onions

Mix dressing ingredients till emulsion is obtained, add the green onions and stir them in.

Pour the dressing and toss till combined

Sprinkle the herbs and toss lightly right before serving
