Samoon bread with cream cheese, kofta meatballs, fresh salad leaves, pickled cucumbers and pine nuts

  • 4 Bread, Samoon
  • PUCK White Cream Cheese Spread
  • 200 Grams (gm) Lamb, minced
  • 200 Grams (gm) Beef, minced
  • 1 Onion, small, finely chopped
  • 1/2 Teaspoon Ground Cinammon
  • 1/2 Teaspoon Ground allspice
  • 1/2 Teaspoon Nutmeg, grated
  • Salt, to taste
  • Black Pepper, freshly ground, to taste
  • 2-3 Bell pepper fillets, roasted, sliced in strips
  • 2 Cucumbers, Pickled, sliced
  • Pine Nuts, to taste

Prepare the kofta meatballs: In a bowl, mix well the minced meat, onion and spices, season to taste. Make meatballs. Preheat the skillet with olive oil, fry the meatballs on high heat, stirring, then reduce the heat to low and cook until done appx 17-20 minutes.

Combine the sandwich: Tear or cut half of the rim of the bread and gently open it to form a pocket. Spread the cream cheese inside of the bread. Add the salad leaves, meatballs, the rest of the vegetables and sprinkle with pine nuts.
