Mexican-style sharing snack platter with cheese

  • 2 Avocado, ripe
  • 3 Tablespoons Lime, Juice
  • 1 Red Onion, Small, Diced
  • 1 Clove
  • 2 Parsley, or cilantro, fresh, finely shopped
  • Salt
  • Pepper
  • 1 jar PUCK Cheddar Cream Cheese Spread
  • 4 Tomatoes, Ripe, medium size
  • 1 Red Onion, Small, diced
  • 1-2 Cloves Garlic, Minced
  • 2 Parsley, or cilantro, fresh, finely shopped
  • Pepper, chili, seeds removed, diced
  • 1 Tablespoon Lemon Juice
  • Tortilla, chips

Make guacamole. Cut avocado in halves, peel the skin and remove the stone. In a medium bowl, mash the avocado pulp with a fork, if not fully ripe. Put the rest of the ingredients and mix gently, season to taste.

In a medium bowl, combine all the vegetables, lime juice, salt and pepper, gently toss

Place guacamole, fresh salsa and cheese into different bowls. Serve tortilla chips for dipping.
